Showerhose (Trevi)?

We have just bought a new shower hose-do we need to turn off the water supply to replace the hose and any tips on disconnecting the old one?

No you do not need to turn the supply off. I don't know about Trevi, but usually the hose just unscrews, and screw the new one in its place.
You do not use teflon tape / sealant/dope.
