my engine rases up and down i was told that my inlet valve has gone when i pull a air pipe of it stalls

if it was a inlet valve the car would mis-fire,pulling a pipe off making it stall sounds like your pulling a vacuum pipe off this would make it stall sounds like its nothing to do with your other problem.
The mass air flow sensor would make the engine rev up and down on its own while idling,difficult to be 100% accurate as i cant see the car.
