my 1973 olds delta 88 is making a gurgling , chugging, noise, almost like it either doesn't have enough water, or like water is somewhere it shouldn't be. This happened after an a cap on my water pump ( a bypass) busted open and blew water and anti-freeze all over

Sounds like you might have run it hotter than it shold have been an its blowing coolant back into the coolant recovery jug which means either a stuck thermostat....bad radiator ...or even a blown headgasket .....
