why does my mazdamx5 over heat i have replaced the radiator, the thermomete?

why does my mazda mx5 over heat i have replaced the radiator, the thermometer, and flushed all the system. i covered 3500kms around europe then while coming up the m1 the gauge shot up it did this a few times while travelling north then there was no problems and carried on for another 150 mls any ideas? thank you.

is the fan cutting in and out ? had one seize before replace fan and also found relay was blown dew to fan siezing.water pump? head gasket ,any water in the oil or vice vercer.

yes sorry i did mean thermostat, i replaced the radiator [and thermostat]because i had the same prob last year and i thought the rad looked like it needed to be replaced and until we were coming back up the m1 we had not had aprob for 10 days driving it does not lose any water and there are no bubbles in the rad and as soon as it gets hot we pull over and the gauge goes straight back down so i do not no what else to try. thank you

Thermometer?Do you mead thermostat?Is this an ongoing fault?Why did u replace the rad?have the coolant tested for the pressence of combustion gases(dye test)and resubmit.
