your shower has a little device in it to save you from a scalding if the thermostat fails. this can cause problems in itself as it may begin to operate too early. However it is very possible that your shower is actually overheating and it would be very dangerous to try to bypass the device that makes this safe. The fact that your shower "stutters when it restarts makes me think the water is boiling off in the heater, serious stuff! you really would be pink if that hit you. As your shower is 8 years old it is getting into the age where problems are going to occur. most appliances are made to last 8-15 years if you are Really lucky. Unfortunately I think that this time you need to bite the bullet and buy a new shower. Triton is really popular and you may well get a straight replacement so no tiling or rewiring but maybe get a plumber in to fit it as it can be a bit of a pig. sorry I couldn't be a bit more upbeat.
