Hi, Im a ford probe owner and had the same problem. If you go to the ford probe owners club website www.ukpoc.co.uk and look in the forums this problem is common. Usually the source is the distrubutor. They will tell you to check all the basics first. I ended up having to have my ECU reset (which cost nothing) and then it ran like a dream.

i would suspect niether, tank is slightly pressurized and sealed as it is not allowed to vent anywhere but carbon canister, coil is a four in one coil pack, all four dont fail as you have described

I would suspect the coil. On the way out and failing when it gets hot.

Or it could be a blocked fuel tank vent pipe creating a vacuum in the fuel tank as you drive along. If you take off the filler cap and get a rush of air as you do it, and then it will start again, then I'd suspect the latter.
