Sue, won't double baking trays retain more heat? No oven is an exact temperature, there will be variations- the engineer I have calls it factory tolerance. Try reducing the temperature from your recipe by a few degrees and and make sure there's nothing on the clean oven floor (spare baking sheets, etc). Moving the item lower down in thew oven may also help.
