How do I disconnect a gas cooker from the gas fittings?

switch of the gas meter handle then close the inlet valve to the boiler then disconnected the cooker after any remaining gas has been burnt out or disappeared into the atmosphere.

If the gas pipe from your cooker is connected to a fitting which is triangular at the back, you can simply unscrew the fitting with some grips, as the fitting it is connected to shouldn't let any gas through unless the cooker pipe is connected to it
