what does the temperature sensor in a simpson encore 756 look like? is it a black little square circuit type looking thing?

No it is a black round sensor usually with a white plastic collar with two wires coming from it to a connector plug on the centre top of the main PCB. The black sensor pushes in to a recess in the floor of the panel console area. In the middle just over the water inlet position.
