fiat swift ducato 1992. overheating?

I have tried bleeding the water tank to get rid of any airlocks.
When I start the engine and the water gauge hits 90 the fan only kicks in sometimes so the gauge then shows overheating to 120.Do you think it might be the thermostat.

Could be but going by the symptoms on my wifes car it turned out to be the head gasket leaking which will be indicated by loss of water but no visible leak.
