can you tell me the book time for replacing the power steering pump

ford times if i remember is 1.7 hours but normally charge 2.5 hours 5 hours is too excessive.

According to Autodata (but only up to 1999) to remove and install PAS pump is 1 1/2 hours. Yours may be different.
