slacken hub nut& wheel nuts, jack the car up ,remove hub nut &wheel nuts & wheel, undo bottom ball joint & remove it,swing the hub & suspension leg assembly towards you allowing the cv joint & driveshaft to slide out of the hub (it may need some persuasion with a few hammer blows to push it out of the hub, also the brake caliper may need to be removed to give more clearance). cut the old boot from cv joint. if you have bought a stretchy boot you will need a fitting cone, turn the boot inside out, lubricate the fitting cone with oil or grease put the large end of the cone over the cv joint & slide the boot (still turned inside out) over it,(it may take quite a hard shove to get it on so make sure your hands are not greasy)turn the boot its correct way & re-grease the joint if it needs it & then fit the clips to the boot,re-assemble everything & torque hub nut to correct torque
