When I try to set the temperature, the display changes but doesn't progressively increase (or decrease). It seems to randomly respond to any attempt to alter the settings - even just touching the dial.

I have the same problem......Neff walloven, large oven above, half oven under. I called the repairman...quote: Don't faint! One part $AUS 183 and the other $Aus 149..and that is only the parts! I would be interested how you got on. I've bought a $10 oven thermometer and hope I get through Christmas with that!
