If the bike starts up and ticks over OK but only dies when you put it in gear and let clutch out. The kawasaki range of VN have two cut out switches one on the side stand and one on the clutch lever.
First check the one on the sideside, spray with DW40 or similar and manually pull and push it in and out until free. Start the bike and try again. If it still stalls the problem is with the one on the clutch. To test it pull the connector block off and place a piece of jumper cable between the block connectors. This by passes the switch. Try again and see if there is a problem. These are the two main faults with pulling away on the VN.

The side stand switch is sticking in the stand down position just cut the two wire from it and join them together obviously loom side not stand side .ps it cutting out coz its thinks its stand is down blame the yanks they sued kawasaki for it years ago when they fell off with the stand down!

Suggests your clutch is stuck on. I would get a big rubber hammer and tap the side of the engine casing, this can free it.
