My fridge is set on minimum but it has started to freeze its contents

Sounds like you have a faulty thermostat or the end of the capilliary tube has come away from the evaporator. The sensing end of the thermostat should be in good contact with the bit that gets cold; may be on the back wall of the fridge if self-defrosting.
