How do I do a simple recharge on the gas system on a Westinghouse Freestyle Fridge

You don't, this has to be done by a refridgeration engineer who knows what he's doing. If your fridge needs regassing, it has a leak in the system and needs to be repaired, if possible. Could be as cheap to buy a new fridge.
