Replacing thermostat in Electrolux ER7831I?

I'm confident about removing all the plastic bits around the control knob but I'm not sure what I'll find about the probe. Is it a simple procedure of extracting the probe and feeding the new one in or is it more complicated? I'm assuming I can do this without taking the appliance out of the housing (it's a built in type). Any help will be much appreciated.

once the thermostat housing has been removed you should find the thermostat plugs in to a socket and then the thermostat phile just pushes down a hole in the lining
