machine set at 40 degrees but water temp is much hotter. how do I replace the thermostat

some are a separate sensor in a black rubber directly in to the tub where as others are in the middle of the element.Have you collected some water at the end of the wash cycle and stuck a thermometer in it to prove water temp.Also has the machine been plumbed correctly with cold water supply not hot??
