It sounds like you have the machine set to print receipts when you are actually trying to use it for a journal instead. check the book for a setting that switches between journal and receipt mode. It will only run the takeup reel in journal mode (also the printing will look compressed to save paper).
All cash registers can show change. You must use SUBTOTAL (ST) after entering the items, then type the amount the customer gives you, then press CASH (TL). change will be displayed.
