Where do I find the hot water link to turn off? I have never done anything like this before

I have a hot water storage tank in an airing cupboard. When I need to turn off the hot water to the taps - to change a tap washer for instance - I close the valve that delivers cold water to the bottom of the tank - the hot taps will run for 30 seconds and stop.

Your question is somewhat enigmatic.
