The control knobs will sit on control shafts that disappear inside the appliance through the control panel.
They will either be fixed to the shaft with small grub screws (unlikely) or just pushed on hard during assembly in the factory.
If you see no partially hidden grub screws then they will just pull off - you may need some force to do this.
Consider how it was put together during manufacture.
I have no experience with domestic appliances - I just guess.
