Rover 114 GSI?

Somtimes when i turn off my 1997 P.Reg Rover 114 GSI, I hear a sizzling noise, the car has a head gasket problem, anyway, what could that sizzling be?? OH and 1 day i turned it off and 2 mins later The FAN CAME ON, AND IT WAS ON FOR A WHILE!?!?!?!?!?!? WHAT DOES THAT MEAN?

The sizzling noise is coolant (water) escaping.

The fan came on because your engine temperature senson had detected that the engine had got hot. It can do that just sitting there because a) the car isn't moving to cool it down. b) You appear to have coolant problem maybe caused by the head gasket maybe the head gasket caused it. Either way unless you get it fixed your car is just going to stop working at some point - possible with a great deal of damage to the engine.
