How can I stop my fiat punto from boiling over?

I have taken the thermostat out and the temperature gauge rises to maximum, does it need themostat to keep it normal temperature?

Did you take the thermostat out because the engine was overheating before that and you thought this would fix it? If so tell me more about the symptoms. Puntos can get airlocked which is easy to fix and costs nothing, but it can look like a faulty thermostat, a failed water pump, blown head gasket or blocked radiator - but it isn't. I need more details to give you more advice.

Your car is behaving quite normally for a car without a thermostat. A thermostat helps to keep the engine cool by making the fan run if it gets too hot.
