I keep getting emails in my junk folder from total strangers bragging about the cheap phones they bought and just got another from 'nopatkangaroogenius for watches rolex-sport [treat 'at' as the normal email address symbol as this site doesn't accept proper email addresses] are these scams?

Yes, they are scams. ALL SPAM must be treated as scam.

You must never, EVER, answer any of those message. Nor click on any link you can find in those messages: They only tag you as a sucker who read those and prompt whoever send those to send you even more.
They will also sell your address to other spammers as a verified valid one.
