At the moment I am opening highlighting and copying the email I want to keep then pasting them in a word file, so when I want to access the links I ctrl click the link in the file and it opens.

Is there an easier way to copy emails without having to open each one, copy contents, and paste into a word file?

if you are using outlook express you can right click on email link, save to folder, on your first attempt you can create a folder in what name you want.
from then on just click save to folder & hi lite the folder you want it in
