How do I change the banner/store name on the receipt for the UniwellNX-5400?

Looking to change the banner on a register we aquired (Uniwell NX 5400 type 1?

Any suggestions? I can't make heads or tails of the manual.

Also hoping to pre-set keys for merchandise on this machine but am having a hard time figuring this out?

Any help would be appreciated?!
