water pressure always on move?

it's a vokera 80-20 flowmatic. good old girl not without her problems.
can someone advise me as to why the pressure always climbs up to 3 bar even when no boiler action is being called for (cold)? it's been doing this for a while now and has recently started to drop pressure while DHW is called and will drop to 0 bar if water is left running for long enough!
could it be a weak expansion vessel pressure or failure or is there a crossover leak yoiu think? should i increase the flow to the boiler to stop it from droppin? still have high pressure then.
during last service ii was advised to ignore the climbing pressure but now it drops while i'm enjoying my shower and i'm worried about her.

the dhw heat exchanger is almost new and the problem existed while operating with the old one too. is there another place where water can cross over systems?
the filling loop is disconnected

if your pressure is reading 3 bar when boiler off.
1, your filling loop could be letting water by. remove that see
if it still doe's it.

2, your dhw exchanger is faulty letting water by into your
primary circult.
