Thanks for the clear explanation which seems to have worked. This is covered in the Bosch manual but in a completely incomprehensible way and their diagrams don't look anything like the real machine!

1. Turn the dial to off
2. Turn on click to the right (30 degree)
3. Press the button under 'rinse hold' - keep it pressed - and turn dial one more to right (40 degree) and release finger from button
4. Turn dial once more to right (60 degree)
5. Use button under 'rinse hold' to set volume of buttons
6. Turn dial to right again (second 60 degree)
7. Use button under rinse hold to set alarm beep volume
8. Turn dial back to stop/top
9. Relax as peace and quiet are restored to your home
