Can I just disconnect the temp probe jack and remove it from the circuit?

My Kitchenaid KEBS107D also shuts off stating the mystery temp probe is causing the problem. We don't ever use the probe - can I pull the oven out and remove wiring to the jack in the oven wall (where the moisture must collect and trigger the probe) so it is now out of the loop? Would I have to clip the 2 wires coming in to the jack and separately cap them versus (I doubt) wiring them together in one wire nut thereby completing the circuit?

This seems like a better solution than having the T'giving bird come out 2 hours late while we had to dry out the oven repeatedly....
