Word Preferences?

Does anyone know how to stop Word opening the last document it had open when it starts up?

Word was probably unproperly closed with that document open. Probably due to a crash, system freeze, or power failure.
Now, word wants to restore the document and properly finish working on it so that you don't loose your work.

Start Word.

Save the document.

Explicitely close the document.

Close Word.
