the pressure keeps going up over 3bar and now the boiler is starting to smell a little! what can i do to try and sort it out?

Ensure the filling loop is shut, even to the point of removing the braided hose.
If this doesn't cure the problem and it continues to rise, there is a problem with the domestic heat exchanger 'mixing', replacement of the DHE being the only solution, these boilers (only seen a few) use the Worcester cdi DHE (see question DIRECTLY below this one).
