why not just fit a electronic speed controller ?easy fix ,buy one rated at five amps

There will be no profit to hold stock of seldom needed rotary control switch - the manufacturer will sell on to OEMs in the volumes you report.

Your solution is to improvise the wiring or a similar switch or to invest in a new fan.
