How can I cut Coving which is already on the wall?

I have taken down a cupboard which coving used to go around, now I want it to go strait then around the corner (no problem with the corner) but it is adding to the existing piece.
How do I make a good edge to but upto.

The coving is probably either polystyrene (cheap one) or a plaster product. Either can be cut with a Stanley knife - just mark it with a pencil and straight edge first and then cut.
